So rich and soft….

The cookie week goes to an end. What a shame! It is time for the grand finale which is the beloved “Peanutbutter + Chocolate Cookie”. Just as good as it sounds. This cookie is a perfect combination of rich Peanutbutter, a soft dough and lots of sweet chocolate drops because with chocolate everything tastes better. I am really looking forward to this recipe and hope you do either. Enjoy the end of this delicious and sweet week and let your kitchen become a cookie paradise….

Let the battle of cookies begin….
Actually I have written this part two times before but I forgot to save it once and the second time my laptop broke down…. Poor me – I know. But this one is going to be much better than the last ones – hopefully 😉

Anyways, I started by combining both types of sugar with butter. Afterwards, I added an egg and combined everything. (After I have written this blog post I might know the recipe by rote because I have written it that often – On the last attempts I had to watch the video I filmed while baking before 🙂 ) Then I put in wheat flour as well as a little bit of salt, peanutbutter and baking powder. You could also add some vanilla extract but this is optional. And don‘t forget the chocolate…. Knead, knead, knead, knead,……. Or let the handheld electric mixer work for you. To coin a phrase: Work smarter, not harder. But I prefer doing it by hand. If it is a homogenous dough you are done with it…..

I preheated the oven at 180 degree Celsius and laid some parchment paper on a baking tray….

Then I formed little balls with the dough and pressed it into cookie shape. Afterwards I put a bit of peanutbutter on top and covered it with a bit of dough. Sprinkle the chocolate chips on top…. voila! Bake the cookies for about 15 minutes in the oven and enjoy them.

Recipe (short form)

  • Combine both types of sugar with butter. Add an egg and combine everything. Put in wheat flour, peanutbutter, a little bit salt, baking powder and chocolate chips. Optional a bit of vanilla extract. Mix everything until there is a homogenous dough.

  • Preheat the oven at 180 degree Celsius and lay some parchment paper on a baking tray.

  • Form little balls with the dough and press them into cookie shape. Add some peanutbutter on top and cover it with a bit of dough. Sprinkle them with chocolate drops and bake them for 15min.

  • 80g butter (room temperature)
  • 40g sugar (white)
  • 60g sugar (brown)
  • 1 egg
  • 150g wheat flour
  • baking powder
  • a little bit salt
  • 20g peanutbutter
  • peanutbutter (filling)
  • chocolate drops
