Fudgy and healthy chocolate pralines…

If that doesn‘t sound good I don‘t know either. But before I‘ll tell you how this recipe was created let us start with some really important (not) news I have to tell you. First things first, I have a cold. A really bad one which is actually no wonder. I had a lesson physical education on wedesday afternoon (It is sunday today) and we did some HIIT training  and played football outside. So I really sweat much. Afterwards I had to walk home and it was actually pretty warm – I think 20°C – but the classical weather to get a cold. Long story short. Lots of handkerchiefs and throat ache. Really annoying. But it‘s my fault because I didn‘t take a jacket with me. Anyways, what I wanted to say is that this recipe might not be that autumn recipe, even though the weather is fitting, but a really fudgy and sweet praline never has been a bad idea – has it? In addition the last few weeks were very tough because there was really much to do for school which started again and I had to get used again to the routine. So chocolate was a good idea. At least I thought so – correct me if I am wrong. Nevertheless, today I felt like writing a new blog post might be a good idea. In addition I made those little pralines yesterday and I just loved them, so I made more. And here we go…..

To make it clear for everyone: I am obsessed. I recently bought a praline like this in the grocery store. I think they were called „Livi‘s kleine Helden“ and I loved them. So I tried to make them myself by the fact that they are quite expensive and I think they are even better. I slightly changed the recipe but I got inspired by the ingredients of this praline. It was a little revision calculating with percentages but I solved it and the final bite is just yummy.

I think there is hardly a special ingredient, so you might have most of them at home. What I wanted to add.

I am using dates in this recipe and you see medjool dates which are really soft and sweet ones but also a bit more priceworthy. The recipe itselfs I prepared with usual dates which are cheaper. You just have to soften them in hot water for about 10 minutes to make sure they can be mixed very well.

If you don‘t have any almond flour use shredded oats or just normal flour. That is not so important. I just was too lazy to mix my oats for this little amount seen with the fact that I hardly use oat flour in other recipes….

How to prepare them:

  • First cook some water in a water boiler and soften the dates in hot water for roundabout 10 minutes. Add them to a mixer and mix until you got the perfect mass. This can take a while and you might have to put the dates off the sides but every second will be worth it. Pinky Promise

  • While the dates are soking in the hot water, you can mix some almond flour, with cocoa powder and grated almonds. Add this mix to the dates in the mixer as well as some agave and oil. Mix, mix, mix until you have a homogenous mass which you can form into little pralines.

  • Let them rest in the fridge for at least half and hour and then they are ready to enjoy….

15 Balls

  • 190g Dates
  • 45g cocoa powder
  • 40g almond flour
  • 1 Tbsp agave
  • 3 Tbsp some oil of choice
  • 1 Tbsp almonds (grated)
  • a glug oatmilk
