It has been a long time since I uploaded the latest hearty recipe. You know that I am a sweet tooth but today it is time for a refreshing but hearty summer recipe that is perfect for very hot days. The green pasta salad is inspired by fitgreenmind and I would really recommend you to check out her recipes. But back to this delicious meal which is perfect for BBQ, as a light lunch or just for eating in the afternoon as a delicious and vitamin rich snack. Eating it with a slice of bread is also very recommendable. Actually I am not a fan of salads themselves. I basically only eat salad with my meal in hotels which have a salad buffet. I don’t know why but it makes the salad more attractive and fancy :). Even though I have a special relationship with pasta salads because I love them. Even if you not feeling the same way you have to try this one because you will love it…….

Life is a combination of magic and pasta……
First of all I started by cooking the pasta. So I think everyone knows how to cook pasta. (At least I hope so) So I heated up some water, added salt, pasta in, let it cook, voila.
In the meantime I washed the zucchini, the eggplant and the cucumber and cut them in little pieces. You could basically use any kind of vegetables but I prefer using them. The zucchini and the eggplant I fried in a pan with some butter until they had a nice smokey flavour. I also sliced some tofu (I would recommend to slice it really thin in order to fry it crispy afterwards) and feta. The tofu I also added to a pan and roasted it in butter until it was really crispy. I also toasted a slice of toast and cut it in pieces.
By the time the noodles were cooked al dente I put them into a bowl and added vegetables, tofu, feta, toast, salad and spinach. Then I put in pesto and some pumpkin seed oil (you could also miss it but I really recommend you to use it). Combine everything. Stir,stir, stir, stir,….. Enjoy your salad.
PS: You can also rinse off the noodles with cold water after cooking them.
