Aka the most underrated and best gnocchi recipe you might have been dreaming of and need to know…..

I have to be honest with you, guys, this recipe is not all my work even though I gave this entire recipe a special twist but this delicious gnocchis are inspired by calikessy. To this effect I want to thank her for the great idea. But now lets concentrate on this amazing recipe, the gnocchis you have been dreaming of. In addition we will make the gnocchis ourselves which is very simple. I actually cooked this meal quite often before I took the photos. I don‘t know why I kinda didn‘t feel like it was pretty enough for you. Anyways, I am always fascinated by gnocchi or in general pasta‘ cause you can basically put anything together and in most cases it tastes good which is just awesome – isn‘t it. But this might be caused by my general fascination towards food:). (Please tell me you feel the same way). My dad is always kidding me because I swarm for a tasty meal I cooked:). Or if I arrange my meal very carefully in order to make it look prettier. I can partly understand him but this is important for me. I drift off topic. Get ready for this super flavourful, delectable, mouth-watering,…. Okay, I got it. Let‘s start:)

Eat Pasta, Run Fasta

I am sitting at my desk with sore legs writing this recipe because I went for a run just an hour ago. I have to say that I have been faster before. Maybe it was the pasta:) Nevermind, did you ever made gnocchi yourself? No, I guess you are not the only one even though it is so simple. So see it as a sign to try it within this recipe. But before we start I have to eat something. I just ate a few cookies today (check out the recipe:https: //www.cooking-cactus.at/rezepte/chocolate-chip-cookie/ )  and it is already 5p.m. I will come back to you….. *one and a half hour later* I am back. Now my brain should work better.

I started by washing and peeling the potatoes. Then I cut them into small chunks and boiled them until they were soft. (Took a little longer:)) When they were I mashed, mashed, mashed,… and added flour and corn starch as well as some salt. The funny part: kneading. But use your hands – the dough won‘t bite you. Whereat you never know. When it is a homogenous dough I took a bit of it and formed gnocchi shaped balls which I sent to boiling water afterwards until they swam nearby the surface.

While the potatoes were cooking I started by washing the vegetables and cutting them. You could basically use any vegetable you like. Then I laid them with the vegan chicken nuggets on a baking tray and drizzled with olive oil. In the oven for 15 minutes at 200°C. By the time the gnocchis as well as the vegetables were done I put them into a pan and roasted them a little more in some pesto. Afterwards I added the gnocchis and combined everything. After putting them on a plate I garnished them with crumbled feta, pine nuts, salad and chicken nuggets.

PS: While the vegetables were in the oven I roasted the pine nuts in the pan.

Recipe

  • Peel, wash and cut the potatoes and boil them in water until they are soft. Then mash them. Add flour as well as corn starch and salt. Go on with combining everything to a homogenous mass. Take a bit of the dough and form it into a gnocchi shaped ball and send it into boiling water. Repeat this with the entire dough. The gnocchis are done if they are swimming nearby the surface.

  • Cut the vegetables, place them on a baking tray (the nuggets or schnitzel as well), drizzle them with oil and bake your veggies at 200°C for about 15 minutes.

  • Put some pesto into a pan and add the baked vegetables and roast them a little longer. Add your gnocchis and combine everything. Place them on a plate and garnish your meal with pine nuts, salad, feta and your nuggets/schnitzel.

Gnocchis:

  • 2 potatoes (big ones)
  • 2 Tbsp corn starch
  • 4-6 Tbsp wheat flour (in this case I used oat flour which also works because we hadn‘t had any wheat flour at home)
  • salt

In addition:

  • half a eggplant
  • half a zucchini
  • 1 carrot
  • 2 little peppers (I used those snack peppers, so that might have been a quarter of a common bell pepper)
  • 1 onion
  • 1 big Tbsp pesto of your choice (I used pesto Rosso but I also like cooking with pesto genovese)
  • Vegan chicken nuggets or vegan schnitzel
  • green salad
  • pine nuts
  • feta cheese
