A delicious salad with loads of different textures ….
I love fall. When the weather is not too hot but still warm I feel like coming home. All the colours and the smell of the fresh air is just amazing. You might go for a walk beneath colourful trees and pick up some chestnuts. Especially this year I am enjoying fall in all its facettes. I love to put some candles and soft music next ot me while studying. The best part: Finally, you can put on some wool socks and cook delicious recipes with pumpkin. Like this salad….
I hate boring salads. So if I eat one, then it has to be with different textures and kinds of flavours which might seem strange first. Within this salad I combined all the ingredients that I associate with autumn and it turned out to be very delicious. Together with some sort of bread or a baguette this meal is just the salad of your dreams. Many of you may see salad as a diet food. But it is so much more. The mouthwatering taste of baked pumpkin combined with the sweet flavour of a fig and some fresh crunch of bell pepper is just perfect to be mixed up in a salad… Almost forgot the best: feta wrapped with some (vegan) bacon.

Ingredients
1-2 Portion: (depending on how hungry you are)
- some green salad of your choice
- 1 potato
- 1/4 bell pepper
- 1 fig
- 200g pumpkin of your choice (I like to use a hokkaido)
- 50g rice noodles
- 75g feta (cut in those kind of sticks)
- 2 slices of (vegan) bacon
- 1 egg
- olive oil
- vinegar
- salt
- some kind of sweetener
- nuts (optional)
